Orange-Pecan Salmon

The third dish I made also included fish (which has been reoccuring thus far). Salmon is something that I eat a lot of anyway but I’ve never made it like this before. This recipe will probably be my favorite for a long time.

Orange-Pecan Salmon

Prep Time: 10 min. + Marinating
Bake: 20 min
Yield: 4 Servings

1 cup chopped pecans
1 cup orange marmalade
1/2 cup reduced sodium soy sauce
1/4 tsp. pepper
4 salmon fillets

1. In a small bowl, combine the first five ingredients. Pour 1 cup marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for 30 minutes. Set aside remaining marinade.

2. Drain and discard marinade from salmon. Place salmon in a foil lined baking dish. Bake, uncovered, at 350°F from 20-25 minutes or until fish flakes easily with a fork.

3. In a small saucepan, bring reserved marinade to a boil; cook until reduced to a cup or less. Serve over salmon.
